6 boneless, skinless chicken breasts Filling 2/3 cup apricots -- chopped 3 T. chopped onion 2 T. slivered almonds 1 T. parsley 1/4 tsp. salt Sauce 1 cup plain nonfat yogurt -- warmed 1/2 cup apricots chopped 1/4 cup dijon mustard 1 tsp. sugar Place apricot mix inside each piece of chicken; roll up and secure with toothpicks.
